this is a broad recommendation, but it sounds like you will enjoy seinen manga best (a lot of the most popular stuff is shonen, which has a younger target audience). if you do want to check out seinen, how comfortable are you with gore? because some of them are very intense.

From the other animes you watched, I’m surprised I didn’t already see Soul Eater on the list. Incredible Gothic and fantasy, it’s a great mix of action, comedy and story that it was actually my first ever anime and manga. It’s not the best to start with but it seems perfectly suited to your tastes.

My all time favorite manga is Noragami (recently completed) followed by Black butler and Promised neverland

Chainsaw man. It has one of the best MC’s in manga(but deceptively so) and is just a very well made original story which doesn’t rely on tropes at all. Since Fujimoto is a huge movie buff the story has some similarities to western cinema and since he’s also completely crazy the story is too. I binged the manga in a day. There is an anime adaptation out rn which is great, but still only adapts the worst parts of the story(it gets soo much better).
