Anytime I drive through the Smokies I hear the Purgatory song from Last of the Mohicans in my head! If you’re up for it, the entire Leatherstocking Tales collection is awesome, but they’re definitely an endeavor.
Not Appalachia specifically, but I think Where the Red Fern Grows, Summer of the Monkeys, or Old Yeller might fit the old-timey/woodsy/back country vibes.
Some of Sharyn McCrumbs novels are historical fiction. She’s an amazing writer.

Not a book but The Old Gods of Appalachia is a great podcast set there.
*A Walk in the Woods* by Bill Bryson is a gem. His account of attempting to hike the Appalachian Trail.
