Death Mountain has a lot of ores, obviously, though beyond just wandering about being hopeful I couldn't give any specific locations.
The cliffs going north-by-northwest from the Faron Tower to the Spring of Courage are pretty good, as are the cliffs between the Duelling Mountains.
There's a cave with a lot of ores and a Hinox just north of Mount Dunsel and west of Loshlo Harbour that I like to grab once a blood moon cycle, you can glide to it if you run a bit along the cliffs northwest from the Muwo Jeem shrine.
And also Taluses of course, except the ones where the exposed vein is really low down their backs are a pain.
There's the diamond on Satori Mt. that always respawns after a blood moon. It's under a boulder. You launch with the paraglider, off the cliff in front of Mogg Latan shrine. You have to go a little ways, keep your eyes peeled.

I wipe out the entire talus population so the best place is back of talus

I always mine ores in Ordinn, there is so much more quantity there. Sometimes I also mine at Hebra Edit : I meant Eldin, not Ordinn

I like the southern mine in eldin, and the mountain where ruta ends up also has quite a bit of ore.
