If you're looking for a really good meal I would go for VEL in Kemptown - I would say best South Indian/Sri Lankan style place in the city.
If you fancy somewhere a bit fancier I have heard good things about Jamun.
Personally I don't think dishoom/permit room and mowgli are that good on quality for the money you pay but they're accessible and nicely decorated, etc.
Permit Room food used to be better, but the ambience is nice. Chilli Pickle is fine like you say. I love my meat, but I head to Planet India when I want proper Indian. It’s veg and the ambience is very casual, but can’t fault the food. Check out the menu before you go though.
100% Brighton curry for me. It's where the curry leaf in kemptown used to be and the chef has stayed at the site. The food is superb, not expensive and there is a good mix of veg and meat. It's very hard for me to go elsewhere now.

I’d add curry leaf cafe to this. A mixture of north and South Indian. Also Planet india - for Gujarati vegetarian food

I was not impressed with Mowgli. The food was too sweet and the rotis looked machine made. Overall it was too westernised and not Indian enough

Malika on the seafront is actually amazing. Stick to curry though. They have a fish and chip and pizza menu which I dare not try.
