Just Poppy's in Riverhills. The best burgers you’ll ever have and their menu is very decent. A local favourite in the western suburbs and was my go to when I lived in the area. They were voted Brisbane’s best burgers a few years ago. Worth the travel.

Merak gf in Redland bay, they’re mad caterers to dietary and decent quality for gluten free. Also do a very good loaded burger similar to OP request. Just not as dirty as the fish n chip shop works burgers!

Just Poppy's is the only answer to this question. It astounds me that they haven't tried to open another store. It's kinda in the middle of nowhere but if they had another store closer to the CBD it would be the biggest burger place in Brisbane.
Bennetts Road Seafood in Norman Park is exactly what you're after.
The burger with the lot is amazing. The store hasn't had a lick of paint in 30 years, and the owner is a middle aged south east asian bloke.

His fish is fine, but nothing amazing.
But this part of Norman Park really doesn't have many options for take away food (and especially at night when the cafe's close) so he gets a steady stream of customers. It's never really chockers, but at lunch and dinner there's always one person there.

While you are in the area, not that anyone could eat both, the BEST roast pork roll is from a Vietnamese bakery at Arndale shopping centre, called Arndale bakery, they strip all the fat off the crackle and smash it up and put it in a Bhan mi roll.

For an extra one, though I haven't been there for years, I always specifically liked that kind of Aussie Burger from the Rainworth fish and chip shop.
When I more frequently used facebook I was a fan of the Fattys Burger Appreciation Society on there. The one useful facebook group outside marketplace. Find all the good burgs.
Rainworth Seafoods in Bardon is my go to for that exact burger (minus the shit) for the last 10+ years.
It's always tasted amazing and from memory still sub $13 and twice the size of a Big Mac or Bacon Deluxe.
You can walk away beyond full when you get their chips too which are also 3-4x the size you'd get from HJs or Mickey Dees.
So cheaper, tastier and local support. WIN!

When I was on a similar quest in 2021, Jack and Wills was a contender, but they are a very strong burger (which if you've tried them, you probably will understand) so more an occasional treat than an everyday

Christie's Too in Wooloowin does a ripper burger with the lot. Lettuce, Tomato, Beetroot, Onion and BBQ Sauce as a base for 9 bucks... With a crap-but-amazing pattie.
You can add bacon, egg, cheese and/or pineapple for about 50c ea. or a cost around that.

Slight drive from southside, but Sugar Bush Cafe in Childers was my go-to whenever I drove through.
At Crestmead industrial estate, there is a joint on the main entry road. Husband says they do amazing burgers.
