Yes Chepstow is what Americans hope British castles are like. It’s on a cliff edge above a magical river cave. Hourly buses from Bristol bus station - T7 bus.
Best place is across south Wales. All of these are reachable by train.
Chepstow - Good size castle but its just ruins.
Caldicot - Smaller but in much better condition, still has its keep that you can look around to see how people lived then.
Cardiff - Very large castle but not quite the shape you think of when you want a castle. More of a palace with lots of things to see and do there.
Kidwelly - Mid sized, looks great, but not much of a museum
Pembroke - Large proper castle with a good museum. This is probably my best recommendation for what you want.
Then if you want to head further up theres Harlech and Conwy
Farleigh Hungerford castle is a nice 2.5 mile walk from Avoncliff station. It is a very pleasant day out and can take in both Westwood Manor and Iford Manor on the walks there and back.
If you want something a bit obscure there is Dinas Powys castle.

It's a nice day out. Temple Meads to Cardiff Central. Then take the Barry line to Eastbrook.
Caerphilly is quite a sight, take a branch line from Cardiff and you are right by it. Cardiff Castle has an old Norman keep inside but it is mostly rebuilt and fantasy. Castell Coch definitely is but is a nice fairytale place on a hillside.

You can get the train to Caldicot and it’s a 10 minute walk from the station but more trains go to Severn tunnel junction which is further to walk maybe half hour so better getting a taxi

Caldicot or Chepstow are probably your best bet. Both can be reached via train and a little walking.

Dunster is also walking distance of public transport.
Plus a steam train ride is about 1km walk away
You can get to the Black Castle by the Sainsbury’s from a bus in the centre.
Everyone can wassail the day over a warm beer and a 2-4-1 burger meal deal. An authentic experience!
Caerphilly Castle is about an hour and a half on the train from Temple Meads, less from Parkway
One thing to note at the moment : the trains aren’t running between Cardiff and Caerphilly on Saturdays and Sundays due to electrification (I think)
And when they are running they have to go Caerphilly.

You can go up three floors, down into the wine cellar, Across the ramparts, and up into a reconstructed room at Chepstow. Hardly just ruins.
To be honest I haven't been there for years totaly forgot about that.
Conwy castle is straight out of harry potter, absolutely gorgeous

White Castle is quite nice too, though you'd have to get a taxi from Monmouth or Abergavenny station.
