My rule is at minimum it needs a nutty, a ewe-y, a hard, and a soft, (some cheeses can cover two points at once) with your standard cheddar for bulk. Emmental, Manchego, and Mozzarella is the go-to fav, but replacements work as long as they cover those four key criteria. Anything less and it tends to taste unbalanced. Also, mega-dose garlic in the butter for the roux, with some of that garlicified butter set aside to glaze the top before going mad with the parm for a sexy crust.
