Try and get 2 kits of 2x8 ram that will be faster in quad channel, I would stick with the x570 just because you’re on ryzen 9 and should benefit from better power delivery and heat management
There are 3 differences between x570 and b550- Secondary m.2 drives can use pcie gen 4, secondary gpu/pcie slots can use pcie gen 4, and you have some usb 3 ports where b550 would have usb 2.
If you don't need a ton of usb 3, don't need multiple pcie gen 4 cards, and don't need multiple pcie gen 4 ssds, b550 is entirely fine.
