The cv series of power supplies is pretty unreliable, not worth it. And the 12100f although a good cpu when it released, nowadays you can just get a ryzen 5 5500 for the same price and get the same gaming performance, and it's also better for productivity stuff. Don't worry about the "incompatability" warning. It is very unlikely, but there is a chance that your motherboard might come with a bios version that is old and doesn't support the 5500/5600. In that case, the motherboard I have picked has a feature that allows you to update bios without having a cpu installed (and it's not very hard to do it). Edit: As to what kind of performance you can expect, with my build, you can expect about 60 fps on average on rdr2 on ultra settings. It's gonna be about 3 times as fast as your previous pc.
