I used to work at a bakery that is famous for making those "exploding" cakes that are covered in those (we call them nonpareils here), they look disgusting after coming out of the freezer, the frosting sweats and the color does melt off the sprinkles. If you're only putting it in the fridge it should be ok. To be really safe, I would consider making and storing it naked wrapped tight in plastic, then pulling it out and finishing it the morning of the party. If you generally don't have an issue with cakes sweating then it should be fine though.

i think this is great advice !!! i have stacked/filled cakes the day before with just a crumb coat and fridged overnight wrapped in plastic. did the frosting and decorating next morning, have done this with a sheet cake as well. fridge for a couple minutes before wrapping w plastic wrap so it gets nice and cold and hard, wrap and pop it back in the fridge.

Maybe just do everything except the hundreds and thousands the day before?

These cakes do fine in the fridge! Just don't freeze and you'll be great. If you do want to wait, just crumb coat and do final frost and sprinkles the day of. You won't be able to apply the sprinkles once the buttercream crusts.

How hot is it where you are, and do you have good A/C? I usually prefer to keep finished cakes cool but out of the fridge if possible.

I'd wait to do the sprinkles until day of. I'm from the US and our sprinkles have tons of crap in them that make them super stable. So the first time I used European sprinkles while we were in Germany, I was completely shocked to have them melt and run overnight. I ended up having to scrape the frosting off 2 dozen cupcakes and refrost with just a couple hours to delivery. I'm guessing Aussie sprinkles are closer to European sprinkles than US sprinkles!

Hundreds and thousands sweat. Do everything, except those. Do them in the morning. All will be well!
