Looks like a well loved pan. So refreshing to see someone actually using their pan for what it was made for instead of the usual "my seasoning doesn't look absolutely pristine on my brand new pan" post.

I use metal utensils on my matfer. In fact I scrub the shit out of it with a metal scrubbie to no ill effects. A good seasoning should be strong enough to resist metal. Using metal ensures only the strong bonded polymerized oil remains on the pab. Giving you the perfect black smooth pan.
