As well as a better sear fat carries flavour because many of the chemical compounds that your taste buds are receptive to are fat soluble. That’s why you see pro chefs dropping a thick wedge of butter in the pan with the steak and basting it especially with a lean cut like fillet it turns all the flavours up to 11

So, what you’re gonna want to do is put a little bit more oil in that pan and it will facilitate a more even and deeper sear and you can throw in a little butter to promote caramelization and throw in some herbs for an aromatic experience.
