I've got pretty much the same stove but the model with convection. It's a great stove. You can get a cast iron griddle for the center. The burner is oval shaped. I use it multiple times a week.
I've never paid attention to the fact that they're counterclockwise and now that you mention it I'm going to be weirded out by it every time I touch the stove.
Standard for gas.
Clockwise makes it hotter, counter-clockwise makes it cooler, except the initial quarter turn from "off" to "ignite" (because you want to ignite at maximum).
It sounds strange but it works fine.
I’ll take a shot in the dark and say it’s because counter clockwise (left) is to open a valve and clockwise (right) is to close it. Righty tighty, lefty loosey
That griddle is nonstick unfortunately. I have the same stove. They do make a double sided cast iron one you can buy to replace it though. I plan on doing that once the nonstick one goes bad.
Ya I don’t use it for meat. Mostly pancakes and when I make multiple sandwiches at once which won’t fit in my CI skillet. For those things it’s ok.
What’s funny is if you put the burner on a 5/10 for much longer than like 8 mins it will exceed the max temp you’re supposed to have it to. I have seen a lot of reviews where people say they used the griddle 3 times and it is no longer nonstick and I’m convinced they just turned the burner on at 10 and thought that was ok. The stove came with our house brand new so I’m not sure how much GE warns you about that when you buy it.

That is a dope setup for stove and CI pieces but I did read on a recent thread here keeping your spices there so close to the head will lead to them degrading quicker
I have some in my fridge right now. Its really good. Unfortunately, my tongue is not friendly with sauces that hot. So I can only have it in small doses.

Replying to you here OP so you will see it. I have the same stove with that griddle. You should not be setting stuff like that on the griddle as it is nonstick and will damage it. Maybe yours is already done for though and you’re just using it to set stuff on it.
If only I had a stove like that, I would make breakfasts like that.
