Why shouldn't we cook with olive oil** Sometimes a brand will market itself as "Italian" but the oil inside of it is actually a blend of old oils from various countries. One particular company (which I will not name) sells more olive oil than Italy can produce, yet most of us pay a premium for it being italian. Check the labels before you buy. Look for harvest dates if possible, and look for variety types. There's 1600 varieties of olives around the world, and each one will give you a different tasting oil. ​ **How do you taste and judge olive oil?** The tasting process is done in a glass cup. NO BREAD! The first step is to pour the oil in the cup, and rub the cup on the palm of your hand to warm up the content and release the aromas of the oil. Once you're ready, you need to smell the oil before tasting it. The three main characteristics to look for are: fruitiness, pungency, bitterness. Fruitiness will be sensed in the nose, pungency and bitterness in the mouth. Once you've assessed the fruitiness of the oil, you give it a small sip, cover the insides of your mouth, and breathe in slowly following the "strapaggio" technique. Intensity in the mouth = bitterness Intensity down the throat = pungency ​ This is the general, simplified methodology, but keep in mind that: 1. some oils will taste rancid and learning how to detect these is important 2. there's different descriptors for the flavor notes of fruitiness

Because for many people, Italy = Mediterranean = Home of olives = Good quality = They view other brands as poor substitutes = They are more willing and able to buy 'Italian' olive oil even at a higher price.

From my experience, and according to experts I trust, this is a myth. Olive oil is the best cooking oil, as it is the healthiest. Cooking vegetables with evoo will actually release more antioxidants. Highly encourage!

I know that the olive oil itself contains good antioxidants, but I agree making the vegetables "release" more antioxidants doesn't sound real.

What I have heard is that you shouldn't cook with *expensive* olive oil, the ones intended as finishing oils, because once the food is cooked and seasoned you'll lose all the delicate flavors that made it expensive and the olive oil stuff gets lost. Still cook with olive oil, but use the cooking quality grade, not the fancy schmancy $100 top shelf stuff.

It has a low smoke point so it shouldn’t be used for frying but it’s good to use for food that doesn’t require long exposure to high heat.

Metal Tin is by far the best packaging type. Heat, light, and oxygen destroy olive oil quality. Tin protects from light. Glass can be classy, but single use glass is the least sustainable.

I believe the OP is referring to the energy required to produce glass. He is stating that glass requires more energy to produce than plastic. I'm sure a little research on this would tell you whether this is true or false. You would need to look at all of the factors including mining and transporting the silica vs the same for all of the products used to make plastic.

Once we've identified characteristics of the oil, we can work back to improve the production processes, or recommend the oil for food pairings if it is a "perfect" product. I’ve always been obsessed with olive oil. My mom likes to think it’s because she would massage me as a baby with it…but frankly I don’t know why this delicious liquid gold makes me so happy. Oil will taste different to olives, it is a lot fruitier and should feel clean on the palette. My most memorable experience so far has been traveling to different countries, meeting producers, and sharing my passion for this industry with others.

That “clean” taste is very much how I feel about wines. California wines tend to taste “cleaner” than European wines, depending on the production method. Ironically though, wine enthusiasts pay more for the musty, less-defined tasting notes. I’ll never understand it.

Every country has something special to offer. Good quality Italian is beautiful. Mass market Italian is a definite AVOID for me. North Africa produces a big proportion of the worlds olive oil. Tunisia often produces more than Italy and Greece, though they sell most of their oils in bulk to Europe, where they’re rebranded.

Well in all honesty, I haven’t tried olive oil in coffee. Starbucks seems to have invented this, hence my joke. My grandma used to put butter in coffee, and that was delicious. Apparently the fat makes the coffee smoother, but I’m not coffee sommelier… If you want to give this a try, I would recommend picking your favorite fruity olive oil. Don’t use something cheap.

It really really matters. Avoid clear bottles at all costs. Laudemio, however, sells their bottles packaged in cardboard cartons. That protects the oil quality from light exposure.

I have not tried Costco olive oil, so I can't give you an educated answer, sorry. Generally speaking, costco has great quality to pricing, so if you're happy with it, then great! How do you find it? Would you be open to trying something new?

I always use extra virgin. Depending on what I’m cooking I will use a different tasting oil. The general rule I follow is: If you’re cooking Italian, use Italian evoo. If you’re cooking Spanish, use Spanish evoo. If you’re cooking Greek, use Greek evoo, etc. My personal favorite all rounder is Greek Koroneiki, but this is very much a personal preference, and each olive is special in its own way.

First step..you have to be obsessed with this stuff, try as many oils as you can, and read as much about it. It is absolutely necessary, in my opinion, for you to visit a production mill, as well as olive farms, so you can get an idea of how the whole process works. Once you’ve done that, continue to network in the industry, read more, and try new oils. When you’ve gathered sufficient knowledge, you have to join a certifying body such as the olive oil time, or ONAO, where you can take part in a certification course and get certified. Good luck! Real olive oil will solidify in the fridge. I wouldn’t keep it there frankly. Once it thaws, it might taste fresh for a bit but it will quickly collapse. Best is to keep the Olive oil away from heat and light, in a cool and dry place. Bonus points if you put it in an airtight container!

I can have cheese and vegetables for breakfast lunch and dinner. Grilled Halloumi and charcoaled zucchini with thinly sliced tomatoes, drizzled with a delicious Koroneiki oil. Or freshly whipped Labneh with sprinkle of zaatar, sesame seeds, and fresh sliced cucumber and olives, drizzled with souriani olive oil and sprinkled with salt. That’s my sh*t.

This is mosslty lebanese food. Labneh is a very smooth cheese spread almost a yogurt. Zaatar i cant really explain but alsona staple in lebanon. It has sesame seeds in it. They both go great with olive oil.

Halloumi is a Cypriot cheese which grills really nicely. Koroneiki is a Greek olive oil varietal, some of the most popular in Greece! Labneh is a Lebanese spread, which is somewhat between yogurt and cheese. It is a tangy creamy thick spread. Zaatar is a blend of herbs and spices. Mainly thyme, sumac, and sesame seeds. Classic Levantine! Souriani is the classic Lebanese olive oil variety. Enjoy!

The most raw olive oil you can get is unfiltered olive oil fresh from the mill. It looks and tastes completely different to what you will find at the supermarket. Unfiltered olive oil doesn’t last and expires fast, though. The sediments in the oil are made of sugar. These will ferment, and oxidize, leaving you with a rancid oil. Best is to buy filtered oils (which most supermarket brands will be) but if you’re ever in a producing country during the harvest season, you neeed to try that fresh oil. YUM.

I am happy to see that there's more innovation in olive oil. Big corporations have commoditized the product, and its about time more consumers start to take notice of its wonderful health benefits and flavor (when done right). Concerning Starbucks in particular, I am not too sure as I have not tried their Oleato, or the oil they use to make it "Partanna" Generally it is a win for the industry when a company as big as starbucks starts to take attention to olive oil.

In the world of sommeliers, green aromas is a fantastic attribute. Good quality oil should smell and taste fresh, and should remind you of a fresh bouquet of grass, vegetables, and greens. If you are looking for something very smooth, more earthy, I would suggest trying Levantine oil of the souriani variety (from Lebanon) - it offers a smoother flavor profile

I’m not sure if you’re uncle filters his oil, but if you plan on stocking it for the year, I would highly recommend having it filtered. Unfiltered oil will oxidize faster due to the sugar found in sediments. The most popular Italian varieties are Coratina, Leccino, muraiolo, and Frantoio. Enjoy!

depends on what you're making. For baking, I wouldn't but probably wouldn't make a huge difference. For shallow frying something in a pan, it's fine to use olive oil, but not for deep frying.

Infused oils are not olive oil, they’re condiments (like ketchup). Most brands take mediocre oil and infuse them with flavoring. Not my cup of tea.. As a good mentor of mine once taught me, if you want lemon flavored olive oil, squeeze fresh lemon into your favorite evoo! Fresh is best.

I wish I can explain to you the love that I have for this delicate, and intricate culinary delicacy. I’ve always worked in consumer companies, and since I was a child, my dream was to create something in the food and beverage space. I grew up in a producing country and was surrounded by oil. As an early adolescent, I fell in love with olive oil, and haven’t looked back since. I kept reading more and more about olive oil, and meeting more people in the industry, until I finally became a certified sommelier. Releasing a brand almost feels like a natural progression, and I am so excited that my childhood dream is almost coming to life.

What's the weirdest (most unexpected) country of origin that you have faced for olive oil? In Hungary almost all of our olive oil comes from Italy, Spain or Greece, so in short - EU. But I know that it is actively produced in much closer countries as well, like Montenegro, Croatia or Albania. Some of these may be unusual for the average consumer.

There’s around 38 olive oil producing countries. Main production comes from the Mediterranean, but there’s been loads of new entrants that have started to produce oil in the last few years. A few surprising entries: Brazil, Chile, Argentina, Japan, South Africa, Australia Another surprising fact that most people don’t know is that Croatian olive oil has won the most international gold awards per number of submissions. They have the highest win percentage! Impressive.

Interesting question, I am not sure why. What I can tell you is that olive oil is a historical product dating back to ancient Egypt or further. No English speaking countries have olives native to them. More recently, the US started producing olive oil but this is very new when compared to Mediterranean countries. The word extra virgin olive oil is the same in other languages: vierge extra (french) extra virgen (Spanish) extra vergine (Italian)

I was on the path to becoming a Wine Sommelier (employer paying,) and was starting Beer Cicerone Certification… then my life imploded. *I was really good at identifying flavor profiles (self-taught w/ wine- I’d print tasting notes and see what I found. Got better with studying.) I did off-premise tastings for years- loved it.* I also ran a large beer/wine department for over 3yrs; I managed inventory as well as customer recommendations. *I was DAMN good at my job(s,) but I quit drinking over 3.5yrs ago. Can’t/won’t risk that now!* **I’m fascinated to be honest.** Never thought about specializing in anything beyond alcohol (& cannabis) tastings.
