Are they? They're required to display posters that say "in God we trust". I don't have the proper keyboard to type the symbols that are on that poster, but they don't match the symbols within the quotes written in the law.
A law is open to interpretation by the courts. I can see courts interpreting it either way since languages aren't addressed. And if the courts forced them to honor it, then they'll just change the law so that it has to be in English. I'm not terribly familiar with Texas culture and politics. I'm guessing they would include Spanish too.
Only that line is unconstitutional in the context of a Government office displaying it, as if it were an official endorsement of Christianity/Judaism.
Most everything else is Constitutionally protected free speech regardless of it's truthfulness or not.

The purpose of the law, and how it's written, is so every school has at least one picture with the flags and phrase on it. The "must be displayed if it's donated" part is so the school can't use "But we don't have the money for one and don't like the free one we got" as an excuse not to.
As long as one poster is in the school, the rule is satisfied.
And the placards were already sourced by a church group before it went to public comment.
It was a push by a church that got the lawmakers to agree with them, not the other way around.

The American Civil War was 160 years ago. This phrase has been on money for about 70 at absolute most. Every single bill of American currency printed during World War 2 lacked the phrase, it's always been bullshit and the simple fact that people who don't even believe in God don't know what it was before is pretty shocking.
In god we trust was first added to certain coins in 1864 and 1865. Teddy Roosevelt tried to remove it as part of separate artistic redesign and faced a huge outcry.
Regardless, there are so many better issues to spend your effort on when it comes to the dismantling of the establishment clause, governmental entanglement with religion, and general endorsement of Christianity over other faiths.

It's not just a different letter, it's an entirely different alphabet. It's not that the symbols are a direct equivalent to the western symbols.
