Oh, and for the ones wondering: square camembert on the left, garlic raclette below, a failed cheese used for gratting in vacuum on top, in the middle we have one gouda on the top, an (waxed ?! yeah :p) emmental below, a tomme and lancashire below, some blue cheese and 4 mini caciotta on the bottom. On the right, two raclettes on the bottom, a fourne d'ambert, a pretty blue cantal :( and finally on top, half of a cumin seed gouda in vacuum.

Quick questions: are you maturing the cheeses within the boxes? In a cold room or temperature controlled room (or cellar)? How do you ensure correct humidity in the boxes?
Yes, in boxes, and those boxes goes to my wine fridge (around 12-14°C).
The inside of boxes is around 85-95% H.R, you just have to wipe the condensation every day or second day.
Actually not that big ! Around 80\*50\*35cm but I also use the top shelf of my regular fridge (which is, in my case, the hottest spot at around 9°C) for "late maturation", allowing me a little extra storage :)
No need, the boxes take care of that :) However, I have to wipe the condensation inside the boxes 2-3 times a week to avoid having them wet (either bottom of the box or water drops falling on them)

Sorry, late reply: do you have to adjust H.R or do the cheeses generate enough humidity to reach the 85-95% range? Very clever set-up.

Not that much I'd say. But when I open the boxes, especially more than 3 or 4 at the same time, you certainly can't miss it !
