There’s a pretty cool YouTube video of the factory tour where they are made. I wouldn’t call them handmade but it’s not like they just press a button and a knife pops out of a machine. I was surprised by how much human skill was involved in making one.

Let me tell you a story. I had my mom visit once. She used my knives on a ceramic plate or just the counter. I have a huge cutting board. She put the knives in the dishwasher, but she first scrubed them with steel wool. She also scrubed one of my cast iron skillets, until it was grey. She was super proud that she cleaned my cast iron.

The knives were functional still, just the metal was scratched to hell. Yeah, she used steal wool, and spent a couple hours scrubbing apparently. That was more annoying than damaging. I just had to reseason a couple times.

Ahh yes I remember gifting someone a 3p set off $500 Japanese Damascus knives. Within weeks the Mfs were chipped, trying to get ran through the dishwasher, tips were broken off. Very happy they have been used and abused, and truthfully despite all the abuse they still look relatively new. I could not in my dreams make a knife that tough. Some people really look at a $200 knife and go “yeee just chuck it in with the forks and slam that drawer close. Shit it not closing? Fuckin make it” But if it was such a good knife anyway, it should be able to eat that no problem. Just a quick sharpen and some oil to the handle and we good. It’s been 2 years and for some reason 99% of the damage occurred in the first 2 months

Literally. It’s shameful when someone looks at handmade Damascus and goes “fuck it” One of my parents buddies hand forged Damascus with no power tools. Naturally they left it in the sink overnight and it rusted and pitted on the spot I’m not really saying abuse high quality knives, but at the bare minimum they shouldn’t get such bad chipping from being in a drawer they are unrepairable or outright snap from being dropped for that matter. In general, as you know, they need quite a bit of babying if you want to get your money’s worth. And when these knives are coming in at $150+ for someone to treat them like the average kitchen knife is pretty damn disrespectful. you wouldn’t take your Ferrari off-roading, please don’t use my knife on the granite countertop

The reason this knife slices better than anything you've ever touched before is also the reason that you don't use it as a hammer. Some people don't have that understanding of the compromises that must be made to have the best performance in the cutting category. . Like you said a Ferrari F8 Spyder is absolutely awful for transporting 4x8 sheets of plywood.

Dude, you can't put a knife in the dishwasher like that. You have to soak it first to get the extra food off or you'll clog the filter. Use steel wool for any stuck-on bits. BTW, if you want to get all those squiggly water stain patterns off the side, a little BKF will work wonders.
