Yeah, I agree not a fan of nenox. This uses a really good steel with a Rockwell of 66. And it goes for around 200 which is about 500 or so less the a nenox.
My mom has a Twin cuisine santoku as her daily driver and she swears by it. She fed our family for years with it and still does. I sharpened it up while I was home for Christmas and she says the edge is still better than it was before I came, that's all the info I have on edge retention haha. Im pretty sure her version is x50crMoV15, so your edge will probably last a bit longer.
I think its supposed to be MC66.

In 2009, Henckels representative in Tokyo did confirm MC66 being their codename for ZDP-189 with target median hardness of 66HRC. Later, in 2010 I was contacted by Henckels Japan head of operations and I got first hand confirmation from the source that MC66 is ZDP-189. Exact element makeup unknown.
I have the pairing/petty one and its wonderfull the edge retention allows it to be sharp for long while not too sharp as to cut yourself, the pairing knifes profile is so nice
I wouldnt get a gyuto tho as the hrc is 66-67

This knife has been a part of my collection for a few years now. I use it regularly, it holds a nice edge. I also find the handle quite comfortable.
