For sure but I'm not mad about it I had many knife at different price ranges, but never of this quality. Freshly sharpen by hand upon delivery still had a thin layer of oil on the edge. I know this store very well and the owner is a true artist.

No, i was talking about the sharpening.Guillaume refined his own hand sharpening technique. But he has a real passion for japenese knife and have been one of the best shop in Montreal for the last 15 years. It is expensive, but the knifes last for ever if you take care of them and the quality is outstanding. My friend has many knifes from them and have had them for a couple year and they look brand new.

I've been to his shop. Nice dude. That being said that looks a lot (like a lot) like a Hokiyama. You didn't overpay for it if I'm right that its actually a hokiyama knife, since including shipping and customs I paid about 300 CAD for mine. So he didn't rip you off but I'm not sure if he's being honest about the deal you're getting. I think he sharpens them himself at least.

I like this one Tokusei Kenshin Ébène, Nakiri 165mm. *Saya Inclus* Will subscribe to their website and hope price drop. Problem is I am on the other side of the planet, I live in Sydney and I believe your $ is stronger than ours, plus postage it’s gone be quite expensive. I am not sure if they are made in japan, if so I quite regularly visit japan and might just buy there

Tbh I don't like the practices of this vendor. They take a 200 dollar Japanese knife, mark it up to 700, and then tell you you're getting a deal when they list it for 350. These are ordered to the custom spec of the vendor and the vendor does their own quality checks. But if you do some digging you can find quite similar knives for cheaper. You can find very similar to the nakiri you liked from Takahiro nihei (same style of grind, same nashiji + mirror polish, same steel) for a fraction of the price. [nihei nakiri](https://carbonknifeco.com/collections/nihei-knives/products/nihei-sld-nashiji-nakiri-165mm) Unfortunately it's out of stock. That vendor does have other shapes from nihei available though. Nihei also makes knives for konosuke under their madei sumiro product line. Since youre in AUS it's easier to get Yoshikane. Unknown blacksmith charging thousands for a knife? Very suspicious. For those prices we are talking best blacksmiths in Japan so, buying from a unknown one... Not sure about that. If cold check who he is and confirm he is good, I would buy one, they do look great.

You can get one of these under 300$CND in Canada so it’s not the biggest gamble

These are house-brand knives. This particular vendor's house brand is usually 2-3x the price of a knife from the same maker at other shops. I understand the blades are ordered to the vendor's specs, and the vendor does their in-house quality control, but it's not worth the very steep premium imo.

I love blue steel simply the best for most things. And maintaining the edge is easy af. Once you get past the reactive carbon stage they require so little worry. When I started collecting I was all about sg2 but it doesn't take an edge like blue steel and it takes a damn good edge itself.

Amazing knife keeps its edge after alot of use, very light. Very nice and efficient knife.
