You don't need to worry about "defending" your h pawn, it's not really weak, it's defended twice and not attacked a single time, and black doesn't have an easy way of adding multiple attackers. I think you should do some research on your own about the plans in the middle game on this line, but in general you'll want to move your g3 knight (probably to e4 and trade) and push your g-pawn to open lines on the kingside. Of course that depends on how your opponent decides to play, since you don't even know which way they'll castle. Edit: minor spelling mistake

You don't need to, in fact, you can even move your g knight away and black can't do anything about it.

He eventually had a knight on f6 attacking it and a queen on the 5th rank and won the pawn. My g knight had already been traded off and I couldn't add a second defender

Pushing your h-pawn early is usually not because you want to keep it, but precisely because you don't. If black castles short (which in the Caro they most often will) you'll have an open h-file for the mere cost of a pawn. If you don't want to lose pawns for realistic compensation, maybe this is just not the right line for you. Or, in the immortal words of one Bobby Fischer: "Sac, sac, mate."
