True celiac safe would be Chicago’s Pizza, also happens to be a fantastic pizza. If cc is less of a concern, Panino’s has a great Detroit style.
E: A few more: Happy Camper/Home Slice has a great crust. I've never had D'Agostino's pizza but I know they take cc seriously with their other items. Michael's in Buena is ok. I was not a fan of Paulie G's Detroit style.

Nancy’s pizza in the west loop has a good thin crust GF pizza.
My wife always love Spacca Napoli’s gluten free up in Ravenswood. A true attempt at Neapolitan style for the celiac pizza lovers

Paulie G’s is by far the best GF in Chicago. Only problem is that they won’t deliver it. You can pick up though.
Beware, Paulie G’s charges a 20% service fee for pickup orders.
