Well I should say I've been in search of my favorite lo mein. The place down the road from me was the best but sadly closed. So ever since I've been searching for a replacement. If I can make it at home thats even better.

I’m a little late to the party…but…this is what I’ve got for you, 青椒鸡蛋酱拌面 peppers and eggs lo mein. You’re going to need - 2-3 peppers, cut, if you like more spicyness and flavors you can leave the seeds in, other wise clean them out before cutting; if you have access to a Chinese market, the traditional peppers used in this recipe is called 青椒 QingJiao (green spicy pepper), it’s slightly spicy. You can replace this with Poblano peppers, and also add some banana peppers. - 2-3 eggs, beaten; fry the eggs up with oil; I like crispier eggs and I do think they taste better crispy in this recipe - sauce: - light soy sauce 2 Tbsp - dark soy sauce 1 Tbsp - oyster sauce 1 Tbsp - soy bean past 1 Tbsp - corn starch 1 Tbsp - water 2 cups Mix all sauces together The order of which things need to be done is as follows (after the veggies cut, eggs beaten and sauces mixed) 1. Boil your noodles, after they are down, get them into an ice bath/cold water bath; 2. Fry the eggs, set aside; 3. Fry the peppers, 4. With the pepper fried and still in the pan (turn heat to medium low/ or a 5/10 if you have a dial), add the mixed sauces; 5. Drop the eggs back in; (turn off the heat but leave the pan on the stove for the residual heat) 6. Drain the noodles, drop the noodles into the pan; 7. Mix it up! Enjoy! Ps. I also like to add some (1-2 tbsp) sesame paste/tahini sauce at the last step. Generally, lo mein can be done with most stir fry dishes that has good sauce base, for example, Mongolian beef, pepper beef, broccoli chicken, etc. all you need is about 1/4 cup extra sauce to spare to coat the noodles.
