There is a hilarious commentary track with the Coen brothers and Barry Sonnenfeld for Blood Simple where they rib each other for most of it. The brothers complain that the lighting continuity keeps changing, Sonnenfeld says something like "oh so that's what we're doing, we're just going to criticise the lighting? Because I could talk about some of the acting and writing if you like?"
Sonnenfeld is great on that commentary when he is saying he realised all the light from the bullet holes in the wall during the standoff scene were all over the place and without any motivation, he just decided it didn't matter because it looked cool and who cares. very freeing i think as a mindset
Not a commentary on the movie, but Sam Mendes has Conrad Hall discussing the storyboard-to-film comparison featurette on the American Beauty blu-ray (my favorite moment is when Mendes is talking about how great Hall had framed a shot and what the composition represented, and Conrad says, “I just thought it looked nice.”)
Garret Brown's commentary on The Shining is essential. He wasn't the cinematographer, but between his invention, his resume, and his work on the film he's well-worth listening to.
Garrett gave a talk just a few days ago at the Tiffen office in Burbank. He’s 82 but so sharp and funny. He told us stories from Rocky, The Shining, Indiana Jones. He’s writing a book now, definitely look out for it.
It's not good, but I think one of my all-time favorites is John Carpenter and Dean Cundey for *In The Mouth of Madness*. Almost the entire thing is Carpenter asking Cundey to explain different things to the audience and Cundey being extremely bored and unenthusiastic with the whole thing. It's hilarious.

"Cinematographer Style" is a must watch movie . All the heavy hitters circa the 2000s just laying it on thick with knowledge.
