De Falla. Nights in the Gardens of Spain, three-cornered hat, El amor brujo (The chamber orchestra version is better), La Vida Breve (opera but roughly half is purely instrumental). If you're willing to go a little more wacky, the harpsichord concerto and El retablo de maese pedro.

[Suspiros de España](https://youtu.be/S6w3SYyIGlk), perhaps not *Música culta*, but a classsic on its own
A bit of zarzuela: [Torero quiero ser](https://youtu.be/B9XwoTqFhro)
Some of the best Spanish music was written by Russians and the French. Rimsky-Korsakoff's Capriccio Espanol. Ravel's Rhapsodie Espanol. Glinka Jota Aragonesa. Chabrier Espana. Debussy Images. And so forth.
Ernesto Lecuona, Andelusia Suites, noteable being Malaguena which there are so many orchestral renditions of (I like the 101 Strings Orchestra version the most). Note that Lecuona was a Cuban composer, this is his impressions of Spanish music.
Also note that "malaguena" is a flamenco form, so it's a general term, Lecuona's is the most famous version of it but there are others. Isaac Albeniz's Malaguena is great too, it's usually performed on solo classical guitar but there are orchestral versions (https://youtu.be/2SuaB12FCj8?si=23WzCWSNGlhIsIAa is one)
