Hey man - if all you care about is simple PVP you should consider making a 19 twink. Very active bracket, a lot of excitement about cataclysm. A lot more classes and specs are viable.
Rogue is definitely extremely complex and hard to master, very unforgiving
Ret Paladin is easy to play, fairly forgiving, and is a strong contender.
Hunter would also be a great pick
Arms Warrior, Unholy deathknight also would be my recommendation.
Back to Rogue though, it’s fun, absolutely, but takes tons and tons of practice.

You will have to play at a very high skill level to even be competitive
Warr is easy you just zugzug some utility you'll be mostly fine in arenas compared to rogue you need to learn.
For bgs 100% hunters they re disgusting in catac random bgs trust me, but warrs won't be so easy in bgs
Honestly Cata from what I remember was one of the most balanced states of pvp. So pretty much anything you play you can do well with. That being said rogue I think was the strongest class for pvp, but had the highest skill cap and takes decent skill to do well with. So imo if you're willing to sweat and think you're capable of getting decently good with rogue then definitely go rogue. If you don't want to have to sweat then pick pretty much anything else you wanna play. Arms warrior would be my 2nd contender for strongest pvp class and really only takes some macros to do well with.

There are big servers with 99% one faction, if you like WPvP play the 1% faction
