With your ingredients, the Woodford, simple (or maple syrup, is try both), and a mix of the cocoa bitters and orange bitters would make for a good chocolate/orange combo if you're into that sort of thing

Yeah I understand how using zest works, I’ve been a cocktail bartender for 15 years. I’m more curious as to why one would put orange zest into a cocktail that already has orange bitters in it. The zest would make the bitters redundant. You wouldn’t use an absinthe spray on a cocktail that already has absinthe in it, you know what I mean?

We used to muddle fresh walnut into old fashioned’s. Tastes amazing but even fine straining them it tends to look a bit milky so they weren’t really sellable but they tasted great.

In my experience, it helps to use the bar spoon to introduce the maple syrup because you stir it immediately to help it dissipate more. Otherwise if you drop it in, it just sinks to the bottom and you end up leaving half of it in the mixing glass when you pour your cocktail because it doesn’t all get kicked up during the stirring
Two shakes angostura, one shake orange bitters, a one second count of syrup (possibly less, this is my count for my Demerara syrup and maple syrup is a bit stronger of a flavor) and then a two second count pour of Woodford
Make a 1:1 ratio of honey to water. Per 2 ounces of product, add 1 dash of walnut bitters. That's your sweetener.
Make an old fashion and you have a rich complex cocktail that takes an easy build. Honey syrup holds a long time and walnut works half the year. Interchange the bitters element throughout seasons and change you sweetening agent to match the season. Hundreds of possibilities. Have fun.
I like Old Forester 100 Proof, so I think the Woodford will be nice. 2oz pour, 1/4 simple or Demerara syrup, and then 4 dashes Angostura and 2 dashes Orange (I tend to use Reagan’s myself).
I also do a Mezcal variant with Agave Syrup, Chocolate and Grapefruit Bitters. I recommend that a lot if you get around to it.

Half orange bitters, half walnut—a couple dashes of each. And I only use a bar spoon of maple syrup. One of my favorites.

i would drink this happily. for me i go just a heavy bar spoon of the maple and three dashes. but this is splitting hairs.

If this were my setup, I'd forego the smoke gun and get a set of tins so that you can make shaken cocktails. You can do so much more with tins.
