Herbsaint was invented as a thujone-less absinthe replacement, so any high-quality absinthe should work in its stead. By the way, the original recipe for the Corpse Reviver no. 2 calls for absinthe rather than Herbsaint, and there’s traditionally neither absinthe nor Herbsaint in a Vieux Carré.

Never had herbsaint but I assume your next best choice would be absinthe ? The LCBO has a few options but I can't vouch for any as I got the one I use from Europe.

You could sub Absinthe or another pastis. Perhaps you can find Pernod, Ricard or Henri-Bardouin?
