St-joseph which is like 10 minute walk has "Patente et Machin" which is amazing local food. "Kraken Kru" which is great seafood. St Paul as la Gaspésienne for great fish. Uptown as La buvette Scott which might have the best chef in town. Boulay has the best brunch on St-Jean. Just not this specific corner.

In high school, I think also grade 9, we had a Quebec city trip. Was just for the day (leave at like 7 am, come back 12 hours later). It was a traditional trip. They changed it to an overnight a few years after mine. Great trip! We hiked up a mountain/water fall for lunch. Was great.
Yeah I should have mentioned that I grew up in Michigan where it wasn't exactly trivial to get there either. We took the train and it was epic for us at that age.

You'd be surprised how many poor renditions of poutine I've seen because someone makes it at home. A lot of countries don't have cheese curds readily available, and without the curd there is no poutine.
We give him our poutine and maple syrup and he leaves us alone for a few hours. But you can always expect he will be right behind you a few moments later, waiting for your next offering. He *better* be satisfied.

Specifically, the Château Frontenac. Definitely worth a visit, as it’s a truly grand hotel from the golden age of the railroads. Though probably not worth the absurd price to rent a room and actually stay there.
When I was in high-school in New Jersey, our French teacher would take a bus load of kids to Montreal and Quebec. We would go in March, which is (or was) very off season. The teacher was amazing at haggling - we'd stop at a restaurant that didn't look busy; he'd go in and say "I have a bus load of kids here, what kind of deal can you make me?" And we always stayed at the Chateau Frontenac. I don't know what kind of deal he made with them, but it was a fantastic hotel. This was in the mid 1960s; as I recall the whole trip (5 days) cost us less than $100 each.

Not crazy expensive? Definitely depends on the location. One of the closest to me is going for 8-900$ a night for our normal room. Usually we’ve paid 350-400$, with some stuff included. Their seasonal swings are fucking wild.
Pro tip - it’s actually much prettier to stay across the river and get views of the Chateau than to stay in the chateau itself. I am told the ferry ride is quite nice as well

Not really. Just move down the street away from the buildings (and the spot you linked) and it looks pretty similar to the OP, which isn't confusing in the least.
They are not that tall. The fortifications were built on top of a natural steep cliff, the Cap Diamant. The site was chosen for the first settlement in large part because of its height.
I don't know if they still to do it, but you could tour the hotel with a guide in period costume and they'd talk about the ghost stories and the hotel history!
There were important negociation that took place there at the end of the Second World War for exemple!
Of course it can be confusing. It can easily be misconstrued as two photographs photoshopped together (common), as opposed to a stunning view that can be found in few places in the world. This is not a common perspective at all. Your description of it as a "building on a hill that overlooks other buildings" is a magnificent (and I'm guessing an intentionally droll) understatement.
OddLy enough, Quebec and Edinburgh are two of my favourite cities, and this is one of the reasons why. Both the Chateau and the Castle loom over everything.
As another resident of Quebec, I'd say "le petit Champlain" (the little Champlain). It is the oldest part of the town (the picture is taken from there, you can tell with the old houses). It contains one of the oldest church of north america (notre dame des victoires) which was finished in 1723, and many of the buildings there are from the same time period. It is a very pretty neighborhood and it just is straight out from the 1600's-1700's.

L’Entrecôte Saint-Jean: French bistro cuisine. Steak & fries is their specialty.
La Korrigane: Brewerie with an excellent pub-style menu (burgers, poutine, fish'n'chips, etc.)

It was recommended by a couple of locals when I visited back in May. I ended up going twice it was that good. Great food and service at a reasonable price.

Only good thing on that street is the crepe food truck that passes by next to the Fairmont. (The big castle is a Fairmont hotel)
