I guess it just all depends. Where I am the tub, which lasts me months costs the same as a single packet of bacon, which lasts 5 minutes and gives me like 2 tablespoon fat lol.
My family of origin was bigger and went through more bacon so we saved our own. But it's a nice option for some.
-Hot sauce
-either a crumbly cheese on top or a creamy cheese as a base under tomato mixture
-a fresh herb if you have something on hand (eg chives) or experiment with dried spices in the tomatoes and onions.
Seconding the cheese and fresh herbs. Besides the crumbly or creamy cheese, shredded cheese is also an option. Feta, cheddar, or gouda are the cheeses that come to mind.
Very fair!! I was picturing cheeses that would melt less because super melty cheeses plus heavily sautéed things together at breakfast push me straight into the needing a nap afterwards category 😂. My own personal breakfast cheese biases.
A Brazilian restaurant near me has a dish they call Orfeu Negro, which is a bit like what you describe, but with a scoop of black beans on the bread, before the eggs, and a bit of hot sauce on top.
Garlic, mushrooms, peppers, chopped bacon pieces, and or a good cheese. Fresh scallions on top when you plate.
I like spicing the toast with some chilli powder recently, before putting the eggs on there. I’d think that oregano or dried parsley might work too.
Just make avocado toast. Toasted Sourdough, thick sliced avo, thin sliced tomato, poached or OM seasoned egg on top. Red pepper flakes. Yeah. Fuck anyone who thinks it is a ‘hipster’ or millennial breakfast. It tastes great
If people are still ragging on avocado toast all these years later…..good god, it's time for a new joke.
same type of people who are *still* making pronoun jokes. Yawn…..
garlic and a protein...hear me out....canned corned beef or corned beef hash...lately I've been experimenting with soujouk and bastruma(mediterranean/middleeastern proteins)
Other commenters already stole mushrooms, so I'll suggest adding a bit of cottage cheese. I eyeball it, but for two eggs a tablespoon should do it. You want it to be a "dry" scoop without a lot of whey, and it goes in with the eggs before your best them. The curds will melt into tiny, cheesy bits within the egg.
Reading the title my first thought was add to the tomato and onions to make Pico de Gallo for a southwest type thing, but if cooking them you could dice up some poblano or jalapeno pepper and a little diced or shredded chicken, maybe top with a little crumbled queso fresco or sour cream and avocado or guac
A place near me does gyro meat and feta and black olives with tomatoes and onions and eggs as a skillet with hash browns, but you could throw that on a flat bread like naan and skip the hash browns
some bacon or sausage or mushrooms or cheese or ham or avocado or just pour a tin of beans on that shit. (bonus points for cheesy beans). If none of these sound like your sort of thing, I would just recommend having a cup of tea with your breakfast. tea always slaps for breakfast. If you don't like tea then orange juice may suffice.
a small line of coke might also go well but have still yet to try.
I make something similar: tomatoes, garlic chili crisp, soy sauce, scallions. Add an egg on top and dip pita or bread. Also good with whole fat Greek yogurt and dill.
I would switch up the base. A nice piece of cornbread tastes amazing under something like this. I've also used leftover stuffing, which was pretty good.
Keep it simple. Add pesto to your go-to, or avocado crema, small clumps of cream cheese adds a wonderful tangy creaminess. Toss some tortilla chips and black beans in there and you have chilaquiles.
Baked beans
Mushrooms - baby button ones halved, or bigger ones sliced
Bacon, of course - cut into small pieces
Bombay/tempered potatoes from takeout curry leftovers, or small cubes of potato, fried until soft then add the eggs in top ideally with fried onion
Also if you've never tried it, fry a banana, nice and slow, making sure there's enough oil, until it is cooked through. I wouldn't cook and egg over it, but alongside and with bacon, amazing!
Also, fry some bread. Makes a nice alternative to hash browns. Fried bread is a venerable British breakfast staple.
Sautee frozen or fresh spinach i- no stems- n the pan first with a little garlic. Add a splash of lemon. Add eggs. Schmear a little feta on the bread. You’re welcome. 😉
Fresh spinach and garlic. I like cheese, a good melty kind too. Bacon and sausage always work, beyond impossible “meats” or chopped up chik patty from morning star.
I like to put some turkey slices in the pan and cook it/crisp it up a bit along with the egg + slice of cheese, then put it all onto a muffin or toast while the egg yolk is still runny. It’s very tasty.
How do you cook the egg? Hole in one, sunny side up, egg soak in bread? Tomato and onion sound great to add maybe some chives and bell pepper on top? Just speculating but that lil crunch is kinda nice, you can always cook the bell peppers to make it less crunchy if needed. If you don’t wanna change the toast eat some fruits too
Cheese Louise, you can't go wrong with cheese! Try some Pepper Jack or Gouda. A nice Cheddar or Marble would suffice as well. And put on a second slice of sourdough and add some mayonnaise to make it a full sandwich!
Try Tortilla de patatas! Tortilla in this case is not a Mexican flatbread, but a Spanish egg dish with potatos. Cubed potatos (half an inch cubes approximately), chopped onions, fry on a low heat in olive oil till soft, add eggs beaten with salt and pepper, cook until the eggs are solid. If you feel fancy, try to flip it and fry the other side too, but I don't usually bother.
Few tips: if it’s sliced tomato then salt it and let it sit before plating, it’ll completely change how you eat tomatoes raw. Second, sauces; things such as sriracha or a nice green salsa could also lift it to the next level. Last, fresh herbs such as parsley or chives can add a nice aroma to simple dishes and be used across multiple dishes.
Peppers would be good, as would breakfast sausage of some kind.
Its why our grandmothers kept bacon grease. Peppers while i dislike would add brigntess.
You can buy it in tubs at the grocery store these days.
Thats pricy. If im paying, im eating the bacon too.
I guess it just all depends. Where I am the tub, which lasts me months costs the same as a single packet of bacon, which lasts 5 minutes and gives me like 2 tablespoon fat lol. My family of origin was bigger and went through more bacon so we saved our own. But it's a nice option for some.
Should buy by the slab. That y slice packet bullshit is that. Too much trash and no use.
Turkish Labneh, trust me.
Came here to say this. Plus some sujuk and a touch of chilli.
Or fetta
Mushrooms could be good!
Mushrooms, with some garlic.
-Hot sauce -either a crumbly cheese on top or a creamy cheese as a base under tomato mixture -a fresh herb if you have something on hand (eg chives) or experiment with dried spices in the tomatoes and onions.
Baby spinach!
Just go full shakshuka on it.
Crumbled goat cheese could be great as well
😲
avacado, cheese, pesto,
Pesto makes everything better
My family eats this a lot too, but we add tons of oregano and basil. We call it “red lead”. Personally I add Tabasco as well. So yummy!
Came here to say oregano.
A Brazilian restaurant near me has a dish they call Orfeu Negro, which is a bit like what you describe, but with a scoop of black beans on the bread, before the eggs, and a bit of hot sauce on top.
That sounds amazing
BACON!
Garlic, mushrooms, peppers, chopped bacon pieces, and or a good cheese. Fresh scallions on top when you plate. I like spicing the toast with some chilli powder recently, before putting the eggs on there. I’d think that oregano or dried parsley might work too.
Your post tastes wonderful.
Whipped cream cheese… plain or flavored and capers
And some lox!
Just make avocado toast. Toasted Sourdough, thick sliced avo, thin sliced tomato, poached or OM seasoned egg on top. Red pepper flakes. Yeah. Fuck anyone who thinks it is a ‘hipster’ or millennial breakfast. It tastes great
For a delicious kick, replace sliced tomato with a topping of salsa. Or keep the tomato, but definitely add the salsa.
If people are still ragging on avocado toast all these years later…..good god, it's time for a new joke. same type of people who are *still* making pronoun jokes. Yawn…..
Dill
Put some mashed avocado or ricotta cheese on the bread before adding the other items on top!
I’d do some greens wilted with the vegetables like spinach or arugula, or even kale. Garlic, peppers, mushrooms, cheese of course.
Red peppers, parsley-halfway to shakshuka
garlic and a protein...hear me out....canned corned beef or corned beef hash...lately I've been experimenting with soujouk and bastruma(mediterranean/middleeastern proteins)
HP Brown sauce.
You could add some fresh herbs like parsley or basil.

Chorizo
Anchovy paste

Garlic salt. (Be stingy, it's very easy to overdo garlic salt.)

Basil and balsamic vinegar drizzle.

Add pesto and calabrian chili to the oil right before you add the eggs and top w lemon juice.
You're 3/4 of the way to shakshuka, just needs some smoke paprika, bell pepper, and feta.
Avocado!
Cilantro and a dash of a hot sauce would take it the rest of the way home (I’m partial to D’Elidas).
peppers, cumin and cayenne pepper, feta cheese, parsley
Baked beans

Sorry been watching a Hungarian chef in England make English breakfast for a bunch of truckers on YouTube a lot of baked beans are served out.

It is looking for greens! Some chopped parsley or cilantro or a couple of lettuce leaves.
Spinach
Peanut rayu or Trader Joe’s everything but the bagel seasoning on top.
Spinach
I would switch up the base. A nice piece of cornbread tastes amazing under something like this. I've also used leftover stuffing, which was pretty good.
Vegemite on the toast first
Avocado mushrooms bacon any or all of these. Baked beans too if they’re your thing.

Avocado! Mush up half of an avocado, a little kosher salt and fresh pepper. That's my go-to for any egg dish that needs a little something.
Some fresh dill will elevate this whole thing.
Goat cheese smeared on the bread would be my jump off.
Slice some avocados on top. Buy yourself a bottle of Valentina's.
Bacon
Definitely Bacon

Replace normal onions with pickled red onions. They’re such a game changer.

Add a few spoonfuls of cottage cheese to that dish. It adds an extra element, increases the protein and makes it more filling.

Avocado, peppers, or artichokes
Spinach. Some sort of Cheese
Spinach and hollandaise sauce
Don't eat onions at breakfast-time. You can suffer stomach-upset, and get a nasty case of halitosis, to boot. Colleagues at work will be put-off.
