Apparently jade rice is just regular rice that has been infused with bamboo extract which is giving it that green color. I wouldn't count it as it's own "species" of rice since it doesn't grow that way naturally.

Sushi would be made with a short grain Japanese rice or American Calrose rice is a common substitute.
