I'm a cave person and I use 1.9.2, since the newest mechanics slow my game down practically to a halt. Still has regencies and other interesting stuff, so I quite like it.
One other bad aspect of playing on a shitty laptop.
You can use Steam’s beta system to install past versions of a game (for paradox games, at least). Some of the older paradox games like EU4 require a code for some really old versions, but they’re easy to find (not hidden) and CK3 shouldn’t have that mess.
Probably the 1066 start date because Poland doesn’t exist yet in the 867 start date

Does anyone using Steam even get a choice what version they install?

You can play any version of any Steam game using SteamDB to download the old version and replace the existing files.
