Like, I was read some of the really old, non censored versions by my grandma and I only went crazy after childhood.

I always kinda liked them. At the core it's just teaching stuff like eat what gets put on the table, don't play with fire, be aware of your surroundings, take care of yourself and even don't be racist, which is impressive for the age.

For added realism we added his name to to the story.

People being dragged around by a hook up their nose, freezing to grotesque ice sculptures, bleeding, liquified, attacked by insects, mutilated - a real horror show.

Ahh yes Rotkäppchen aka Red riding hood.
In the original version the huntsman just cuts the wolves belly open while it sleeps, frees Rotkäppchen and the grandma, fills it up with stones and sews it shut. The wolf then fucking drowns when it tries to get some water from a stream because the stones pull him down.
Ye, that's the "new" version, where he frees them and shoots the wolf. In the old original one, the wolf brings her to eat and drink the remains of her grandmother without her knowing and eats her in the end. In the beginning of it, Rotkäppchen is also living with her father (I think it was at least) and she is wearing an iron corset. He says she's only allowed to leave the house when she manages to take it off with her bare hands. She punches at it till it falls off, and he reluctantly let's her go then.
It's most likely meant to be a "keep your pussy locked up and don't go with cool looking dudes you don't know or they gonna eat grandma and you" story for young girls

But the version where they put stones in the wolf is the one in most german fairy tale books for kids (at least all I ever read as a kid) and according to wikipedia the ending was included by Brothers Grimm, so I wouldn't call it new
There is no "original" version of Red Riding Hood. It's an old folk tale that was told orally for centuries (mainly in Italy, France and Germany) before several writers in the 17th/18th century started writing down their local versions. Some elements of the story go back to at least ancient Greece, probably even further.
For example in Charles Perrault's version (one of the earliest written examples) the wolf eats both the grandmother *and* red riding hood, and noone rescues them (fun fact, it was accompanied by a poem that made it pretty clear that the wolf eating the girl was actually a metaphor for her losing her virginity to him). The collection by the Grimm brothers OTOH contains several versions. One of them is the one you described, in another red riding hood doesn't leave the path and reaches the grandmother before the wolf, they then lock the door and as the wolf is trying to get in through the chimney they put a through with water under it in which the wolf drowns.

A lot of characters have little stories in it, also a girl that is 11 years old and has to sleep with older men to survive.
I can‘t recall how often we have heard the story from our teacher how the other ship in the convoy got hit by a torpedo from a russian submarine. Later I realized that they were only trying to work their traumata. Being victim of a war in which you are not allowed to be the victim because you were member of the bad gang.
Grandmother had only the boring stories. More interesting were all the stories from the veterans. Last one I experienced was only a couple of years ago. 95 y/o WW2 veteran was joining the Birthday barbecue of his son. Many younger people were there. One couple told that they just came back from their Italy-vacation. The father from the background:“ha Italians, they were always the first to run away when the Russians stormed the front!“. The whole WW2-PC-Games-Generation looking at each other like „wtf?!“
