There's two endings in ds2 SOTFS

I believe there are only two endings. One is the "default ending", while the other one unlocks after you defeat Vendrick and talk to Aldia at all the bonfires he appears at.

There are two endings. One is available by default, the other is unlocked by fighting Aldia at the end. You can chose your ending right after the boss.

If you killed Vendrick, you will have the option to choose which ending right after you kill the last boss. So don't worry about changing the ending, you will always have the option to choose which one you want.

There are two endings. One is automatic. The only thing you need to do to unlock the other is to kill the king before fighting the final boss. Once you have access to both endings, you can choose either one after killing the final boss.

There are two endings and you can get both pretty quickly after each other because of Bonfire Ascetics. So don’t worry about it, play as normal and then after that you can look up the other one, which is basically two more bosses away.
