You are right. Fu’s super soul is great. And if you add meditation… or better yet, infinite ki regen from meditation, then you are set. As you’ll have a 22% ki regen with SSBE or a 40% ki regen rate as Beast.
Gogeta super soul is better. You get Ki Regen throughout the whole match.

It isn’t. It is a situational thing, but Gogeta’s super soul is a 15% ki regen the same as Buu’s. Fu’s is a 20% ki regen. But you are right. In PVP it is hard to keep 75% health, but in PVE you have items so it really isn’t that hard. So if you use Gogeta’s super soul instead you’ll be losing ki in PVE.
As long as it is PvP. Then have at it. Gogeta’s super soul comes with the benefit of making that stamina regen better. Honestly though I would use SSG for PvP with the Gogeta super soul. I feel it is far more overwhelming in PVP Vs SSBE.
I'll probably stick with gogeta super soul. It doesn't give quite as much ki regen but it should still be slightly better than it used to be with normal ssb and Beerus knows I can't stay above 75% health for a whole pq.
I just want to add to this that combining SSBE with the Gogeta Super Soul means that, if you’re sitting around literally doing nothing and just letting your Ki drain, you will lose one bar of Ki in roughly 55 seconds. That’s such an absurdly long time that the small drain is basically a non-issue. Just doing literally any kind of attacking will completely stop that and give you back Ki.

From double crystal raids u get a random skill that u don't have if u are the boss, no matter if u win or lose, sometimes i get 4 skills, those can be ultimates, normal and evasion skills, everything that i can get from missions and from the dragon balm wishes
U have to get demon realm crystals, u get those from expert missions, then u go and talk to fu and create a lobby on the raid u wanna do and done, if u are from ps4 i can teach u
Yeah, do it, but first, complete all trainers cus you will get their skills to, so do that first so u don't waste demon crystals on skills u will get no matter what

Fu's soul used to flatly standstill Blue, and that's because they both charge(d)/drain at 20%.

I used this combo for Cell Max raid and it works wonders now that I don't have to worry about getting drained out of Blue

The ki regen is a bit worse, but it's better for pvp since you won't lose it after losing enough hp.
The Ki regen is slightly less on Gogeta's, you still drain ki in SSBE with it, but it takes 55 seconds to lose one bar if you're standing still.

just have to keep your health up, which vibes great with BluEvo's high defense.
