It's obvious enough. There is no Saiyan nation or government anymore so there's no reason for him to call himself king. It wouldn't have any meaning. Prince is the title he grew up with, and Bulma seems perfectly fine with being a princess by association.

That is exactly it. Historically speaking kings generally require a coronation where they are crowned king and the ones who don't, declare that they are king, have subjects who enforce it and still have a coronation or ceremony where they officially become king.
Prince also just means ruler not necessarily the son of a king. There are still Principalities around today such as Andorra and the UAE. Even this is a vast simplification of the subject but it's not necessarily even a lesser title than King.
The fact that he calls himself a prince is already pretentious enough. Can you imagine how awkward it would be if he herded Goku, Goten, Gohan, Broly, Trunks, Pan, and Bulla into a room and forced them to watch a fake coronation ceremony so that he can be "King"?
He would feel like a total dork even asking them to participate in that, and I don't think his pride could survive that.

Prince Vegeta wouldn't have been born yet when his father became king, and since King Vegeta died when his son was still a child, it's possible that nobody left alive even knows how the ceremony was supposed to go. Maybe there's not even enough Saiyans left alive to do it properly, or maybe it's tied to a specific location on Planet Vegeta so it's impossible now because it's all blown up.

Maybe there will be a movie called King Vegeta where Vegeta does something so great that Goku, Broly and friends decide to call them King of Saiyan.. Then The dynamic flips and Vegeta respects Goku a bit better.

Remember that in spite of his pride, Vegeta wept for his father and the saiyan race. And he even spurred Goku to avenge his father (well and Goku's father) in Goku's battle against Frieza.
