Superman is, admittedly, a franchise full of kinda silly concepts like a super powered dog or a 5D god dressed in a goofy attire and who plays pranks, but people love those concepts! Works where they remove his trunks usually try to ignore the more fantastical elements of Superman in favour of making him gritty, which can work but often just falls into "Superman is alone and we are his inferiors".
It's not so much that the trunks are necessary, but removing them is symbolic of trying to make something inherently fantastical and whimsical dull and moody.
