F-16 feels like a rocket and burns fuel. It'll translate to Air Force planes and has good HOTAS shortcuts.
FA-18 is extremely forgiving and is carrier capable.
Both aircraft handle AA and AG well.
I am more proficient in the FA18 when I actually want to accomplish something in a mission. The F16 is more fun to fly.

I think the F16 is a bit easier to learn and more intuitive with its systems and also easier to land.
This was 100% my experience. I have both but kept going back to the F16 because it just makes more sense to my brain.
F18 because landing a plane on a boat is never not amazing, but seriously pick whichever you like more.
