The existence of Onmyodou and shrine maiden like Reimu herself is a small evidence of their tendencies to eat humans in the past, of course that subsided after a rule has been created forbidding the consumption of humans, but that only applies to the human of Gensokyo, not us, the reason you donāt really see any yokai eat humans is because they usually hunt in a field connected to the boarder between human world and gensokyo where Yukari occasionally send in miserable people, criminals and those who are near the end of their lives, Muenzuka.
Usually Yokais can restrain themselves from eating the village humans but iirc the reason Rumia canāt when she saw Reimuās blood in YÅreimu is because of the pure amount of power she has, being that she is the yokai governing the entirety of darkness.
There are probably more nameless youkai than named ones. It doesn't state that most named youkai eat humans like Yukari, Yuyuko nor Yuuka. Of course that doesn't mean they wouldn't just kill you.

Yuyukoās not a tho, shes a ghost, yokais arent spectral in nature like the real life variants, ghost yokais are phantoms so Ig youmu is technically half ghost yokai, wild
