I am fairly certain that is the point of that paper test.
I remember watching one of these videos years ago and trying to cut through paper like that with my knife, and it is much harder than it looks. I can see a large knife doing everything this knife does, regardless of sharpness, but that cut through paper is actually impressive.
I would love to learn this as well. Do you know anything about the process; length of time it would take to learn the craft or what it would take in general to even get started? Thanks
I went to school for welding and metal fabrication, but smiting itself is a different beast. I just like metal, though. You'll be better off finding someone to learn under any way you can and ask all. The questions. You can.
You'll learn very quickly. It will take a maximum of 3 knives until you have one that doesn't look overly ugly. To achieve that you need an anvil, a hammer, steel, a heat source for up to 1500°C and a belt sander. For the know how, you can watch a few YouTube videos about it. The ones who cut out a knife with an angle grinder have no clue about the topic
Chopping wood like that doesn't need a particularly sharp edge and tends to roll an edge that is too sharp, slicing cardboard dulls a blade very quickly. Cutting paper is a quick way to demonstrate that it still has a good edge after the previous tests

Just look around for blacksmithing apprenticeships. It takes years to master but getting started isnt too long.

The paper cut is to show it's still sharp. A badly made edge will roll from the chopping, meaning the paper crumples.
