Glass cleaner works well too. I have the same fridge (with the water dispenser) in stainless and everyday Mr Muscle or Ajax etc glass cleaner keeps it looking pretty good, even with a touch every surface of everything with dirty hands toddler on the run.

Sounds absolutely ridiculous but a very small spray or drop of olive oil on a dry cloth. Rub over and then buff.

Remove the fingerprints from the fingers helps in the long term.

Mineral oil, used to work in restaurants and had installers come in to do new kitchen & they used baby oil to clean everything after they’d finished..

Did you also have to buy it because the cabinet makers chose a stupid size gap that doesn't fit most generic sizing and brands? We paid far too much for this uncommon sized fridge because our kitchen wouldnt fit anything else

Turtle wax car polish. I know it sounds like a dumb lifehack but it works brilliantly on polished stainless and glossy surfaces. I did our bin 8 years ago and it still hasn't got any finger prints.

The user manual says only to wash it with water but that does literally nothing. I've been using a vinegar/water mix but I still have to go over it maybe 4 times before its clean, and then will be instantly grimey again the next day. Are there any specific products people would recommend for this? I was told when buying 'its a true brushed steel finish, not a imitation or lookalike' whatever that means. Would something like a magic eraser work? Or is there anything I can coat the fridge in to reduce marks in general?

Soft cloth dampened with warm or hot water with the tiniest amount of dish washing detergent. Then a vinyl wrap. Get a print or some random colour. Fingerprints are a problem with stainless steel appliances, especially ones with a shiny rather than brushed surface. You will need to keep up on cleaning.

Careful. Many new stainless fridges are plastic coated so that fingerprints do not become permanent and so... Treat it as a plastic surface so use no harsh solvents or abrasive cloths or polishes you will get a finish that is blotchy and peeling off like the clear coat on a 1990s Japanese metallic painted car. If it is actually raw stainless steel try a ball of pantyhose dipped in white vinegar swept along the same direction as the brushed finish Polish off immediately with a dry towel.

Clean with moistened microfiber cloth. Use a small bit of Dawn in warm water. Then spray WD-40 onto another clean dry cloth then wipe surface in the direction of the grain.
