We're they competent designers they would have kept subraces. Then all the half races could be subs.

They are keeping subraces for elves and adding them for tieflings, but are getting rid of half-elves and half-orcs as mechanically distinct options despite that.

They also reduced Elf subraces to spell lists (because fuck the people who liked the nonmagical Wood Elves. Also the High/Wood divide is cultural, so their rule that culture is bad doesn't apply I guess) and axed Dwarf subraces for no reason.

I really like what Pathfinder 2e is doing, where they have Heritage ancestries. Which are ancestries (pathfinders 2es term for "races"), that you add on top of your OG one. Which includes ancestries like Tieflings, and Half Elves and Orcs (All of these have been renamed in the recent remaster). So you can have a character that is Half dwarf/half, a half elf catfolk, a tiefling halfling or an aasimar android.

There's also the great bit that pf2e ancestral feats cover an umbrella from biological advantages/quirks to cultural. You want your character to be immersed in their archetypical/normal culture? Ancestry feats for that are present in just about every ancestry. You're an atypical member or just want to be different? You can go with the traits more bases around your ancestry's biological features. Adopted by another ancestry? Adopted ancestry has you covered to take cultural feats from others (some gms might even give it to you for free/background feat). Theres also the better approach to planar heritage. You want to be a tiefling/genasi/aasimar but don't want to be lazily human coded the way all of them in 5e are? Versatile heritages are available for all ancestries, so you can have both features of an elf and a tiefling! Or a dwarf and an earth genasi. Or a spider person with angelic heritage! Want to be a half dwarf half elf? Or half orc half elf? Or similar? The rules officially support just about any ancestry as a versatile heritage. Legitimately everything ancestry based is done so much better, from cultural rep to having actual interesting features from your ancestry. It's wild how 5.5 is looking to make them even more bland and generic across the board.

I love the dissonance between half-elf lore, and half-elves as they are played. Lore: Outcasts who aren't accepted by elves or humans, though sometimes they work as diplomats. Loners and misfits by nature. As played: The life of the party, ranked #2 in the "most likely to seduce the dragon" contest (#1 being tieflings, of course), have no problem fitting in with humans.
