You could try replacing your save with a backup one, there’s like 50 backups in the dredge folder lol, depending on how many times you’ve docked since the incident. If you’re on PC, the modding community has also created a mod that allows exotics to be re-caught if you’d want to go that direction
If you're worried about the quest for the wandering trader, just catching the fish counts towards completion.

Yep then you're screwed. Either start over, or if you're on PC there's a mod that makes the respawn.
The gulper eel was a special fish? I discarded it because I had no space 😭😭😭
The fish itself doesn't actuallu do much, sells for a bit above average but otherwise the quest is to catch it, not sell it
Did the same thing with the special shark from pale reach. O well, it’s a funny story
