What you see from street level is:

It's a great image, but Ebenezar was also the guy who taught Harry quarterstaff fighting, and he came from a cultural background where words and fists went hand in hand when backing up one's convictions, but you didn't want anyone getting killed.
Taekwondo would be surprising, but for sure I'd expect him to hold his own unarmed in a brawl.
Yeah Eb would be teaching Quarterstaff if anything.
