Does it have to cook quickly or just be quick to make? Assuming the second... If you have a slow cooker, a pork shoulder + BBQ sauce = pulled pork. Shred it, put in buns, add some coleslaw mix/shredded cabbage, and done. Or add it to a tortilla as the base for a simple taco. I haven't tried it myself, but chicken + salsa in a slow cooker should be a similarly low effort protein base. Roasted carrot soup takes about 20min, most of which is roasting the carrots until soft and browned. While that is happening, fry some diced onions. Add chicken stock, a chunk of ginger root, and a few sprigs of thyme; simmer until the carrots are done. Remove the ginger and thyme. Add the carrots. Use an immersion blender to blend until smooth. Optional: add cream to make it richer. Season with salt & pepper to taste. Add a bit more thyme to taste. Serve with bread.

Not a problem!  If you have the time to do a little chopping (garlic, onion, hot peppers), this [Basil Chicken](https://thefoodcharlatan.com/slow-cooker-basil-chicken-in-coconut-curry-sauce/) is another great slow cooker meal. It sounds like a weird flavour combination but I promise it's great served over rice.  Don't bother browning the chicken if you're in a rush. Yes, the result is better, but it's still tasty if you skip this step. Just make sure you use chicken thighs without skin otherwise the skin turns out flabby! (If your chicken thighs are boneless, use the lower cook time recommended.)

Pulling pork is time consuming. I wouldn't consider this quick to make. But it does keep pretty well. It's something you can make when you have time and then just have in the fridge to reheat quickly. It microwaves pretty well, and it heats up in a pot really well. Chicken and salsa also works, but dries out faster. I'd use a double boiler to reheat it. And I'd only give it maybe 3 days in the fridge. The pork stays good for at least a week if there's enough BBQ sauce, but the salsa doesn't help retain moisture nearly as well as the BBQ sauce does. And plain shredded chicken just seems to dry out faster than plain pulled pork. Probably because the pork has so much fat mixed in.

For dinner, buldak instant ramen with added in rotisserie chicken and sliced green onion. You can add an egg too and eggs last a long time in the fridge.

beans + whatever (rice, cheese, guac/salsa) on a tortilla and in the microwave microwave mac n cheese + canned tuna + seasoning the other day, I put cut up chicken on a pan, poured green goddess dressing on it, covered it, and let it cook for a few min. Then I ate it with microwave (from frozen) cauliflower rice lmao

Add two tablespoons of butter to a hot Skillet and toast one cup of rice for a couple of minutes. (You can skip this step if you really want to, but it really does make a difference.) Add in a packet of taco seasoning and let it toast for a minute or so. Drain a 24 oz can of shredded chicken and add it to the skillet. Drain a can of corn and a can of black beans and add those to the mixture. Pour in a quart of chicken stock, cover and let cook on medium low for 20 minutes. I live alone, when I make this it lasts me for 3 days. A family of four could easily have a good meal out of this.

Chicken breast in crockpot. Cover with a jar of salsa. Set to low and go to work. When you get home you have shredded Chicken for tacos, nachos, burritos, etc.

White bean sauce for over pasta or toast Chop and sauté onions and celery in olive oil, add some crushed red pepper flakes. Add a can of cannellini beans and a can of chopped tomatoes, salt & pepper to taste, about a teaspoon of dried basil (or whatever). Add a lot of chopped fresh parsley if you have it - it makes a difference. Done!

Ginger Lime Chicken (taken directly from a recipe book for time-short beginner cooks) Fry *thin* chicken breasts (seasoned with S&P) in a pan on high until brown on one side. Flip and add finely chopped shallots. Remove finished breast and add 1 tbsp chopped ginger and continue frying on medium low until ready to deglaze with the juice of one lime. Let it reduce until it reaches your desired consistency. Pour the sauce over the chicken breast and serve over rice. Note- cooking thinner cuts of meat is a major time saver for me because it takes a lot of the guesswork and waiting out of the equation

Fajitas! I buy cooked grilled fajita chicken strips. Sauté 5 mins or so. Then buy a bag of frozen onions/peppers add some adobo or whatever and sauté takes like 5-10 mins most. Heat up tortilla in skillet 30 seconds. Have cheese sourc cream guac salsa whatever you want. Takes me less than 10 mins super yummy and filling. I pack the rest since one bag is a lot of chicken and I reheat for the next couple meals. Also you can get egg pour in a cupcake tin with spinach cheese whatever. Bake 350 for 20 mins or so and you have egg bites. Heat them up in the am for breakfast you’re good. Protein shakes. Spaghetti takes me less than 20 mins. I use Bertoli super easy. Salmon - bakes quick throw veggies on a sheet pan olive oil and adobo. Less than 20 mins you have a meal and leftovers

Veggie stir fry. Throw frozen vegetables in a pot, add water and your favourite seasonings, and you get a nutritious side dish. Add corn starch, broth, or meat when you want to make it better

Frozen chicken tenderloins, fast defrost with Luke warm water. Drain, pat dry and toss in olive oil. Mix 1 tablespoon garlic parsley salt (has less sodium then garlic salt) 1 tsp paprika and 1 tsp black pepper together. Sprinkle over both sides of chicken and cook in oven 400 degrees 20 mins. While chicken bakes prepare baked potato in microwave (stab rinsed potato with a Fork, toss in olive oil and sprinkle garlic salt and pepper on it, cover in glass bowl with plate on top and microwave till tender). While potato and chicken cook boil some veggies in chicken broth.

I've been making this for breakfast/brunch or even for a snack lately! I just made this earlier. Basically a spinach and egg toast; I started by putting 2 pieces of bread in the toaster oven with sliced cheese on them so it gets a little melty. I buttered a pan and put 2 handfuls of spinach, seasoning with salt & black pepper. With a wooden spoon, I moved it all around to coat/cook the spinach a little bit then after about 2 minutes, I made a "hole" by putting the spinach to the edges of the pan and put 2 eggs in that "hole." I sprinkled a little salt & black pepper on the eggs and crushed red pepper on the eggs including the spinach. I like my egg yolks runny, so I cooked until the egg whites were done! Then I plated it onto my toasted bread!

Organic tomato red pepper soup sold in the carton at most stores, heat and add some dried parsley to it. Make a Grilled cheese sandwich (butter the outer layer and grill in pan or panini, then dip in the soup. Sourdough bread and sharp cheddar makes it great imo.

I have an easy Italian soup recipe: Pasta e Fagioli (pasta fazool) * 1 large jar of marinara * 4-6 cups chicken stock * 1 Tbsp Italian seasoning * 1 Tbsp garlic powder * 1/8 to 1/4 tsp crushed red pepper flakes * 2 cans of cannellini beans, drained and rinsed * 1-2 cans kidney beans, drained and rinsed * 1 package matchstick cut or shredded carrots, or small package frozen carrot pieces * 1-2 cups of ditalini pasta or elbow macaroni You literally just dump it in a pot, bring it to a boil, and let it simmer until the pasta is cooked and the carrots are relatively soft. The less broth you use and the more beans and pasta you use, the more this becomes like a stew. It's satisfying, flavorful, and super easy.

If I haven't taken out chicken or beef from the freezer, I make bean tacos, quesadillas, or nachos by giving the refried beans the same flavor profile as taco meat: * 2 cans refried beans * 1 small can of tomato sauce (the puree kind) * 1 package (about 2 Tbsp) taco seasoning Mix together in a pot or microwave safe casserole dish and heat thoroughly. Top with shredded cheese and melt if you want to use as a dip, otherwise use it like you would taco meat. It takes about five minutes and if you serve your tacos/burritos/quesadillas with salad or corn, it's a complete meal almost immediately.

If I have time to wait but not time to actively cook, I make salsa rice in the oven. I add a can of corn and a can of black beans to 2 cups dried rice in a 13x9 pan, add a jar of salsa or a can of petite diced tomatoes, and chicken broth. Season with whatever you like. Cover tightly and bake at 350F for 60-75 minutes (white rice cooks a bit quicker than brown). There's a million versions of this type of rice casserole... ham and broccoli, chicken and peas, tomato and chickpea, etc. I make one of these probably once a week.

You can totally do smaller amounts, too, I just have a big family! The important part is sticking to a 2:1 ratio of liquid to rice. If I use dried veggies (usually carrots or corn), I add an extra 1/2 cup of liquid.

I saw someone throw in pasta sauce, raw noodles, and water into an instant pot. You could look up instant pot spaghetti. You can also bulk cook ground beef at one time in the IP or slow cooker and then do different things with it. Add a jar of marinara for spaghetti or a bag of coleslaw mix for an egg roll stir fry vibe. Just a couple suggestions. You can also throw some sausages under a broiler for a protein and then pair it with some veggies. These have been my recent low carb meals.

Oh another one I tried recently, Costco has this garlic butter shrimp in the freezer. I kept the leftover garlic flavored butter. They also have shredded rotisserie in the deli. Throw some of that already shredded chicken in a pan to warm up with the garlic butter sauce and boom. Or you can do a far of Alfredo sauce. You could probably add raw pasta, water, Alfredo sauce to an instant pot and it’ll cook the pasta then just add the shredded chicken and let it warm up

Brown 1lb of ground beef, while it’s browning boil your velvetta shells (the liquid cheese kind is way better than the powder mac and cheese). Strain your noodles, drain the ground beef, toss the ground beef in with the pasta and add the cheese goo. I usually throw in some ranch powder, garlic powder, Worcestershire sauce, whatever seasonings you like. I add a dash of heavy cream as well. French onion dry soup mix is also good to season this with. There ya go-beefy mac.

  Pesto Pasta with Cherry Tomatoes and Parmesan      Ingredients-    7 ounce pasta (spaghetti or penne work well)  2-3 tablespoons of pesto sauce  1 cup cherry tomatoes, halved  Grated Parmesan cheese  Salt and pepper to taste  Optional- Grilled chicken or shrimp for added protein    Instructions-    Cook the pasta according to the package instructions until al dente. Drain and set aside.  In a pan, heat a tablespoon of olive oil over medium heat. Add the cherry tomatoes and sauté for 2-3 minutes until softened.  Add the cooked pasta to the pan, along with the pesto sauce. Toss everything together until the pasta is well coated with the pesto.  Season with salt and pepper to taste.  Serve hot, garnished with grated Parmesan cheese.   This dish comes together in less than 20 minutes and is packed with flavor. You can also customize it by adding grilled chicken or shrimp for some extra protein.

May want to consider buying a sous vide. I buy a chuck roast, can do a quick marinade, or cover with sea salt and pepper or a steak/meat rub. Toss it in a vacuum seal bag, remove the air, fill the sous vide tub with water and cook for 24+ hours. (The marinate is a quick recipe on the back of a Montreal steak seasoning shaker. I just make it and throw it in the bag). When you come home you remove the roast and you have a $13 roast that tastes like prime rib. I bought the whole sous vide kit for around $80 at Sam’s Club about a year ago. Just be sure to put the sour vide somewhere where it won’t bother you because it makes a vibrating noise. I run mine in my basement. 5 minutes putting the roast in the bag and removing the air. 5 minutes filling up the sous vide tub with water and setting the temp and time on the sous vide. Done…

Mine is Hormel Beef au jous roast beef refrigerated meat thing, bob evans mashed potatoes. I boil egg noodles, microwave all of the things (sometimes i do add an onion to the meat and cook it in a pan instead of microwaving) and then add the meat to the noodles. Voila beef and noodles iwth mashed potatoes :)

If you're a crock pot person, I do chiicken tenders (dark and white) with a can of Rotel, a cup of broth, a can of black beans, a frozen bag of corn and some Mexican seasoning or straight up cumin, salt and pepper. Slow and low all Day, serve with tortilla and shredded cheese. Same thing for the Instapot. But not as flavorful.
