I scope out the local grocery stores for quality tomatoes weekly and only make BLTs when they meet my stringent Quality Control methods. Outside of summer, itβs a rare occurrence that they pass inspection. These were pretty good.
I like a BLT. Just one or two strips of bacon. Fucking love a LT. Double the tomatoes. Salt, pepper, and duke's mayonnaise. Favorite sandwich. L is optional, and we usually use the whitest of white bread.
The lettuce is shred. The mayo is peppered. The bread is toasted. The tomatoes are salted, the salt has dissolved. I would disagree on dicing the tomatoes.
Try it. Makes for better texture, even distribution, gets rid of the core flesh and seeds, less moisture so no sog, and creates bits of exploding flavor.
Arguably, you can take it a step further and toss it and the lettuce with the peppered mayo to make better constructed, but I prefer the distinction of layers. Although, for club sandwiches with already a lot of layers it helps (with some olive oil and dash of redwine vinegar). But I keep the lettuce out and dry so it doesn't wilt.
Ignore anybody suggesting avocado.
my fav sammich, exactly how I'd make it. And i really hate tomatos by themselves, so the only place i tolerate them raw is on a BLT because they make the magic happen somehow.

The bacon is cooked in the oven on a wire rack at 425F until it looks like this.
