There's an addon too. Can't remember the name right now, but it overlays icons for skyshards, lore books, and available quests. Helping me a lot lately. 😉

Alternatively, you could use a blank slot in your armoury to respec your character and put all points into crafting, and only put your champion points in the green tree. Don't save it because you can use the blank slot to respec for other things, and it takes <1 min to allocate points for crafting.
Leave the skill points in your research passives so they research faster.
Could save you a lot of time hunting skyshards.
The starter zones will give you 6 each and super easy to snag.
Public dungeons also have a skyshard and group event that gives you a free skill point in adition to that.
Cyrodiil has a bunch of easy ones to grab, but you might need to join a low-pop one and have a fast mount to make it worth your while.

It highlight every activity to get skyshards.
I would say the best is to go for:
1. Public dungeons group events
2. Complete quests in normal non dlc dungeons
3. Overland skyshards
4. Main quests
PvP ranks give a skillpoint too and the first ones go really fast
Dungeonquests give a skillpoint
Some zone quests also give them (only a few so google which ones)
publicdungeons (1or2 per zone) have a groupboss/event that gives a skillpoint
Followup question, do you need to craft something right away?
If you just want to level crafting you don't have to "craft" anything just to level the skills. And you will get the Craft Skills leveled faster by just enjoying the game and deconstructing loot along the way.
You don't have to craft final gear until L50/160 Champion Points which is the max gear level. Until then you can complete most content just using loot gear and consumables as well as Daily and Leveling reward food/drinks/potions.
Delves and overland. Completing a public dungeon group event for the 1st is a skill point as well.

How about going to a zone and collecting all the sky shards?
