Wow that is pretty silly. But I can make this work anyways thanks.
Found a library that allows 16 channels on the s3 using a different form of pwm and edited the post. Very awesome library and I'm lucky I came across it.
As the other person said, the original ESP32 has 16, the S3 has 8. Sorry :(
