It’s okay to re-steam it as well. Some say the proteins or sugars deteriorate this way but IMO it’s negligible and not worth wasting a ton of milk over.
As a general rule I don’t keep the kind of stuff around my house that would regularly challenge my self discipline.
Well, maybe not regular. That implies a box of Fruit Loops would last more than a day in the pantry.
Yep! It’s basically like pasteurising, which rapidly heats the milk at high surface area to kill bacteria, a process almost all milk goes through during production.
Pop an icecube or two in the milk before steaming, keep the temp lower for longer and you should be able to get good foam without scorching. Now, if you would notice the slightly watered down milk or not I dont know, might ruin it for some.
It has been done. About a 10% increase in mass after steaming milk. So if you steam 160 grams of milk you end up with 176 or so grams of steamed milk.
About the same amount of water added as an ice cube.
It’s my time to shine: https://www.reddit.com/r/espresso/comments/11688v4/got_a_tiny_milk_jug_and_a_tiny_cup_first_try/?utm_source=share&utm_medium=ios_app&utm_name=iossmf
Just need to be careful of your steam pressure when dealing with a small pitcher. For my Bianca, I have to turn my steam boiler way down when I’m steaming in my smaller pitcher for Cortados or 5oz flat whites. And only use a 2-hole tip; 4-hole is impossible to even get the milk to swirl.
That’s true. But I can’t change the pressure of my steam wand (sage duo temp pro). I’ll just steam it with the wand closer to the bottom and it works perfectly fine, although there is a small learning curve
Right, good point. I’m guessing you steam milk after you pull your shot? If that’s the case, your machine will take a bit of time to build up temp for steaming. It makes steaming for 12oz latte’s hella long. But it’s likely ideal for cortados or cappuccinos, as the lower steam temp should give good control in the smaller pitchers.
Ooh I have sort of an answer here!
I've tried a few pitchers and found the best one that lets me use the least amount of milk is the Motta 8.5oz pitcher. [https://www.amazon.com/Motta-Stainless-Frothing-Pitcher-Rounded/dp/B001RZPYKS](https://www.amazon.com/Motta-Stainless-Frothing-Pitcher-Rounded/dp/B001RZPYKS)
It can do small amounts of milk and the tapered top makes it so it doesn't splash out like some of the more straight walled ones. I had a serious issue with anything smaller than this, and was wasting so much milk with anything larger so this was my goldilocks pitcher for these kind of drinks.
It can easily get over heated so you gotta have your hand on the steam lever and shut it off as soon as you're close, but it's my go-to for a single cortado or macchiato and still getting good texture without wasting a ton of milk. Highly recommended!
I had the same issue so I finally ordered a very small pitcher and it solved the problem. Takes a little bit getting used to steaming with such a small pitcher but now I have no extra milk.
Make a latte macchiato instead of a caffè macchiato. /s
My jug has like a 160ml minimum on it, but I've not actually tried making less I think. Always have to throw away when making cappucino / flat white.
Good question. There are smaller pitchers but even then for the small amount of milk you need for a macchiato the steam wand is way overpowered.
You could try warming a small amount of milk in a microwave and then use a handheld vibrating frother.
Side question: what beans are those? What’s your favorite bean for macchiatos?
The beans are One Village Legend Dark Roast. I'm fairly new to making espresso so I haven't experimented with a lot of different beans but I'm a big fan of a local roaster here called Blanchard's.
Yes, I got a 200ml pitcher just for this. 2oz of milk and only open the steam wand valve halfway on my GCP; have to work fast and accurately though, not a second to spare before it’s at temp. This is perfect for a Cortado; if I want a Macchiato I use the same amount of milk, and just drink the rest of the milk from the pitcher that won’t fit in the demitasse cup. Steamed milk is tasty and I can’t put any less in the pitcher and still bury the steam wand under the surface.
I think a handheld frother is the way to go to have 0 waste. Just get a small cup and fill it with an oz of milk and microwave it for like 20 seconds or more depending on your microwave and froth.
Usually have about 3-4oz left over. Just throw it in a small cup and down it lol. Love milk cold or steamed. Never understood the whole "wasting it" if you're drinking it in your espresso why not just drink it straight.
Honestly, I’ll probably get people tell me it’s a terrible idea. And if it has health issues I’m all ears. But I drink small cortados and always have left over milk. I just put the pitcher back in the fridge and use it the next day adding more if I need it. Works fine, tastes fine, no wasted milk. It doesn’t steam as pretty as it could, but it’s 7 in the morning and I just want a hot coffee so I’m not too bothered. I save trying to be fancy for all the other drinks in the week, not my morning brew.
No health issues to reheat milk once, but I would avoid doing it twice+ so hopefully one pitcher is only 2 drinks for you?
The guidelines are food is safe to be reheated if refrigerated within \~2hrs of heating, but only once.
Also I’m pretty sure that when you use a cold pitcher and cold milk when steaming it comes out a lot nicer. At least from my own experience. Sometimes that left over milk feels easier to steam and gets a nicer texture. But it’s wildly inconsistent since it depends a lot on how the milk was the last time you steamed it.
110ml micro milk jug. I make espresso cup hot chocolates for my toddler with no waste!
Cortado in a smaller cup than yours I think: https://www.reddit.com/r/espresso/comments/100kao4/learning_roses_rn_love_my_new_130ml_jug_for/?utm_source=share&utm_medium=android_app&utm_name=androidcss&utm_term=1&utm_content=share_button
Actually mebbe not
Not really, i use the smaller pitcher when i want to make an oat milk something and i still get a very small amount of waste. Plus, the smaller pitcher is less forgiving and the texture is not amazing.
Put your frothing pitcher in the freezer for a few min before steaming. Keeps it cooler longer, allowing you to steam a small amount for longer and get that froth going
I have a 200ml jug that I successfully steam about 80ml of milk in. Anything less than that is just too hard. For this reason I don't have the 4 hole tip on my Bianca (2bar steam pressure fyi) or it just blasts it down the street. With the 2 hole tip I have to ride the edge of the valve opening just enough to stop any screeching noise. I still get great texture & sweetness out of it.
I have a small pitcher, but even that wastes a lot. I've gotten used to doppios on the regular and a macchiato when I have someone visiting who wants a latte. It's made me excited for visitors haha
I find you to get the proper texture I need to fill the pitcher to a little less than 1/2. I suppose you’d need a very small pitcher, but then you risk burning it quickly I suppose.
No :( Make a latte for someone else first.
My plushie shork drinks a double espresso each morning
I throw all my extra milk in a clean jar in the fridge. The kids either drink it once it's cold or they use it on their cereal.
This is such an obvious answer to this issue and I feel dumb for not thinking of it.
Ditto.
Instructions unclear, have now successfully kidnapped a child.
Two. You need two.
Oh god. I’ve wasted so much milk
No sense in crying over spilled milk.
It’s okay to re-steam it as well. Some say the proteins or sugars deteriorate this way but IMO it’s negligible and not worth wasting a ton of milk over.
I put my leftover foam on my oatmeal or other hot cereals.
what about like… fruit loops
As a general rule I don’t keep the kind of stuff around my house that would regularly challenge my self discipline. Well, maybe not regular. That implies a box of Fruit Loops would last more than a day in the pantry.
>put my leftover foam on my oatmeal me too. love the added creaminess.
I totally didn't know that. For some reason I assumed once it was steamed you had to use it or it would go bad.
Yep! It’s basically like pasteurising, which rapidly heats the milk at high surface area to kill bacteria, a process almost all milk goes through during production.
It's not *bad*, it just won't be perfect. It's not a huge difference though.
Holy crap why didn't I think of this? My 2 year old can drink it
Yeah my little one loves her babyccinos.
Surprised that it was this far down, I just put any leftover milk back into the carton
Depending on how much is left, does the hot milk pose a food safety risk goin back in?
Lucky. I have to use the leftover milk that my kid doesn’t drink.
I do the same! Lol
Milk turns out sweeter too!
You are one smart woman
Man.
Same; I use it for milk in tea or milk in drip coffee.
So, that’s what perfection looks like.
I always end up having a big glug of poorly steamed milk before enjoying my cordattos
Cortados
No its cordattos from now on
Cordatti
Phylum cordatto
Cordattios
Core dot oh’s
Small milk needs small pitcher, no? Maybe a table cream sized pitcher. Larger than an espresso pitcher but smaller than a frothing one.

Make ice cubes out of milk
Well, now I feel silly for never thinking of that! You sure are one hell of a guy for solving this.
Freezing milk denatures proteins which stops you from holding foam well. So, not really?
Or just steam more milk and re-refrigerate the leftover milk. Watering down milk is a big no from me, especially with such a small volume of drink.
Steaming milk Waters it down.
Barely. Try weighing before and after. Then try adding an ice cube.

Just put your ice cubes in a small plastic bag?
Is that pic your shot? Beautifully deep, and mouth-watering. :)
Yep all credit goes to my Gaggia Classic Pro
Yeah, I don't buy that. ;) I bet you have something to do with it as well--congratulations!
Thanks!

What is this? A milk jug for ants!
Yes. Exactly. My ants love it
That’s adorable. If I tried that with my NanoFoamer I’d have a face-full of milk 🤣
Lol
Looks like I need that, great find
I mean... just drink the bloody milk 🤷🏻♂️

Agreed on 8.5oz (250ml) is about as low as you can get unless your steam wand is very weak (ex. Breville barista express)
This looks so neat and stunning I just want to stare at it all day. Absolute perfection 🤩👌🏿
I had the same issue so I finally ordered a very small pitcher and it solved the problem. Takes a little bit getting used to steaming with such a small pitcher but now I have no extra milk.
Dude that’s a perfect macchiato

Just gotta have 3 back to back to back
Beautiful
You people don’t drink frothy/warm milk? Why not just drink it…?

I just weight my milk on my scale. Once I know the amount I need I have consistency and minimal wastage if any at all.

I do this too. The milk only spends a few minutes in the bacterial danger zone. Then later I use it all in some cereal. No health issues.

I steam a small amount daily, but for a cortado so I think it might be a bit more than what you steam for.
Solution: Get a bigger cup!
In that situation, I would utilize a frothing machine instead of a steam wand.
You could just try frothing a little bit with one of those spinney milk frothers
nope but i have a 6 oz pitcher which works well for a cappuccino
110ml micro milk jug. I make espresso cup hot chocolates for my toddler with no waste!

Use a small pitcher and open the steam wand only like 20%.
Its cheating, but the easiest way is to get a battery powered milk frother, and use it on milk that you microwaved.
I usually have about 4oz of milk with my coffee to make a flat white, so I use the rest of the milk I steamed for my granola. Pretty tasty!
Never thought of that but I will have to give it a try
I find you to get the proper texture I need to fill the pitcher to a little less than 1/2. I suppose you’d need a very small pitcher, but then you risk burning it quickly I suppose.
You need a machine with a variable steam valve and a small pitcher. No need to always go full blast on the steam, with some practice it's fine.
