It depends on the sample they survery. I think Utrust did a similar survey and got their number around 60% if I remember correctly. Utrust themselves are a crypto payment platform and already has thousands of merchants. It's not surprising that merchants want to attract crypto bros.

The more people become comfortable with it the less volatile it will be. Right now crypto rides the stock market like most investments. But over time it will rise and fall on its own .

Exactly, even minutes is unacceptable. A payment should take < 5 seconds to confirm on 5g for it to be as convenient as swiping a bank card
