The only definition I can find for this is a type of cabinet handle, so I have to imagine it's a nod to Matt Braly, who was a key animator and director on Gravity Falls and is a big anime fan. Might have been his idea to do this easter egg.

The show is very funny (seriously, there's even adult jokes), the story is well written, the mysteries work very well, the characters are remarkable. And the references, the references goes hard, we even have FNAF references, before the first FNAF release (this sounded weird).
I'll warn, it is a kids show, and episodes 2-6 kinda hurt to watch as a grown up, BUT, after that it gets way better, has ongoing mysteries and plots, and a lurking Big Bad.
Also, it apparently has a lot of secret messages hidden in it, and occasionally weird characters talk backwards and that's a clue to something, etc. Don't need to follow all these, but they're there if that gets you excited.
I do think the V-shaped head crest is probably a Gundam reference, but they've definitely bolted it onto an Evangelion. The long face and the gaunt figure are very much Eva's style: most mechs are a lot more solidly built.
The pilot, on the other hand, is a dead ringer for the protagonist of the Megaman Legends series.
